Three Mother's Day Recipes for Chai Lovers

Mothers sacrifice so much for us, from caring for us as kids to always being a loving friend as adults. Make this Mother’s Day special with the sweet and spicy flavor of chai in her favorite desserts. These three fruit-inspired desserts are the perfect way to show your gratitude for everything she’s done.

 

Apple Crumb Chai Pie
Surprise Mom with the indulgence she deserves with this warm pie and a carton of creamy vanilla custard.

Ingredients:

  1. 6 cups peeled, chopped apples
  2. 8 oz. Oregon Chai The Original Chai Tea Latte Powdered Mix – Canister
  3. 1 tablespoon water
  4. 1 cup oats
  5. 3/4 cup flour
  6. 3/4 cup packed brown sugar
  7. 1/2 cup softened margarine

Directions:

  1. Heat oven to 375 degrees.
  2. Put chopped apples in 8 x 8 inch pan (or round pie dish).
  3. Add water and sprinkle with 1 1/2 teaspoons Chai mix.
  4. In a bowl, stir remaining Chai mix into margarine.
  5. Add oats, flour and brown sugar, stir until crumbly.
  6. Sprinkle over apples.
  7. Bake until golden brown and apples are tender, about 25–30 minutes.
  8. Delicious warm with ice cream

 

Oregon Chai Apple Pie Coffee Cake

Dunk this delicious apple cake in a mug of chai as you share stories at the breakfast table.

Ingredients:

  1. 1 1/4 cup flour
  2. 1/2 cup sugar
  3. 1 tsp. baking powder
  4. 1/4 tsp. baking soda
  5. 1/4 tsp. salt
  6. 1 tsp. cinnamon
  7. 1/2 cup butter
  8. 1/3 cup Oregon Chai The Original™ Chai Tea Latte Concentrate
  9. 1 egg
  10. 1 tsp. vanilla extract

Topping:

  1. 1/2 cup flour
  2. 1/2 cup + 2 Tbsp. packed brown sugar
  3. 5 tsp. butter
  4. 2 cups apples, pared, cored and sliced
  5. 1/4 cup Oregon Chai The Original™ Chai Tea Latte Concentrate

Directions:

  1. In large bowl combine flour, sugar, baking powder, soda, salt and cinnamon. Add butter and mix until crumbly.
  2. In a separate bowl, mix together Oregon Chai Original concentrate, egg and vanilla.
  3. Blend into flour mixture and spread in a 9 x 9 inch greased baking pan or into a small Bundt pan.
  4. In a small bowl, mix flour, ½ cup brown sugar and 3 Tbsp. butter until crumbly. Set aside.
  5. In a saucepan sauté apples in 2 Tbsp. butter for approximately 2 minutes.
  6. Add Original Chai concentrate, cover and continue to cook for 2 more minutes.
  7. Spread the crumb mixture on batter.
  8. Spoon apples over top and sprinkle with remaining brown sugar.
  9. Bake 350° for about one hour or until the top is golden brown and a toothpick comes out with moist crumbs.
  10. While your coffeecake cools for 10 minutes, take some of the remaining Original Chai concentrate, mix with equal parts milk, heat and relax.

 

Strawberry Chai Pie

Spend the day strawberry-picking with Mom and baking your sweet spoils into this decadent chai pie.

Ingredients:

  1. 1 pre-cooked pastry shell
  2. 1 quart fresh strawberries
  3. Glaze
  4. 1/2 cup strawberries, crushed
  5. 1/2 cup Oregon Chai The Original™ Chai Tea Latte Concentrate
  6. 2 tsp. sugar
  7. Red food coloring
  8. Whipped cream (optional)

Directions:

  1. Precook pastry shell and allow to cool.
  2. Clean strawberries, cut into bite-sized pieces and arrange in piecrust.
  3. Make glaze: combine crushed strawberries and Original Chai concentrate in saucepan. Bring to boil, reduce heat to medium and cook 2–3 minutes, stirring frequently.
  4. In a separate bowl, combine sugar and cornstarch and mix well.
  5. Strain juice into sugar mixture and mix well.
  6. Return to saucepan. Cook until clear and thickened, stirring constantly. Remove from heat, add food coloring to desired color. Cool slightly. Spoon over strawberries.
  7. Serve immediately. Top with whipping cream, if desired.
