CHAI GRANOLA BARS
Ingredients
Old fashioned or rolled oats | 2 cups |
Sliced almonds | 1 cup |
Shredded coconut | 1 cup |
Pepitas | ¼ cup |
Chia seeds | ¼ cup |
Ground flax seed | ¼ cup |
Unsalted butter | 4 tablespoons |
Honey | 1/3 cup |
Maple syrup | 1/3 cup |
Light brown sugar, lightly packed | 1/3 cup |
Salt | ¼ teaspoon |
Golden raisins | ½ cup |
Dried apples | ½ cup |
dried cranberries | ½ cup |
Oregon Chai® Powdered Vanilla Chai Tea Latte Mix | 2 packets |
Directions
Preheat oven to 350° F. Grease and line an 8”x12” baking dish, set aside.
Toss oats, almonds and coconut together on a sheet tray and bake for 10 minutes stirring occasionally, until lightly browned.
Cool and add mixture to a large mixing bowl, add the pepitas, chia seed and ground flax seed, golden raisins, dried apples and dried cranberries and mix well. Set aside.
Reduce the oven temperature to 300° F. Place butter, honey, maple syrup, brown sugar and salt in a saucepan and bring to a boil over medium heat.
Cook for 2 minutes, remove from heat and stir in the Powdered Vanilla Chai Tea Latte Mix. Pour butter and sugar mixture over the oats and mix until everything is evenly coated.
Pour granola mixture into the prepared dish and gently press mixture evenly into the pan.
Bake for 25-30 minutes or until the edges are golden brown. Cool before cutting into rectangles (makes approximately 16 bars). Serve at room temperature.
